The other day for dinner I cooked up a couple slices of pork on a bed of onions, accompanied by scalloped potatoes. I was so excited because I haven’t had scalloped potatoes in forever…my mom used to make them all them time and since I moved out to college I don’t remember the last time I had these.
I think the pork turned out alright seeing as this was the first time I had ever cooked it. It was a teensy bit tough, but I’ll fix that next time.
It’s food and it’s keeping me fed so I’m happy with it. It also was the first time I used my baby cast iron skillet. I found my little skillet at an auction last summer I think and having inherited my procrastination abilities from the best (haha love you Mom!) just got around to seasoning it. I didn’t realize how long of a process it would turn out being. I used the link below that I had pinned awhile back to season the pan. The instructions were quite wonderful and very easy to follow.
I’m very slowly settling into a new routine here in Morgantown. The piles of boxes are slowly dwindling one-by-one, and I’m hoping to be all unpacked and newly organized soon. I didn’t realize how much
crap stuff I owned until I had to put it in boxes and transport it 25 minutes away, haha. Thankfully I have been able to go through things, especially my clothes, and get a bunch together to donate. Like most packrats getting rid of anything is almost physically painful…what if I need that sexy milk maid outfit after I donate it?! But seriously, I have been getting better mostly because I am trying to pare down my life with the eventual goal of a carry-on lifestyle…we’ll see how that works out.
